Zankou Chicken Marinade Recipe

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)


  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, salt, black pepper, and cayenne pepper (if using).
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish.
  3. Pour the marinade over the chicken, making sure it is evenly coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
  4. Preheat your grill or grill pan over medium-high heat.
