  • 2 boneless, skinless chicken breasts
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh parsley


  1. In a small bowl, combine paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper to make the blackening seasoning.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Rub the blackening seasoning evenly over both sides of the chicken breasts.
  4. Place the chicken on the grill and cook for about 4-5 minutes per side, or until cooked through and nicely charred.
  5. Remove the chicken from the grill and let it rest for a few minutes. Then, slice it into thin strips.
