White Chicken Chili Recipe Giada

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 2 cups shredded cooked chicken
  • 3 cups chicken broth
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 1 cup frozen corn
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste


  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and jalapeno, and sauté until the onion is translucent, about 5 minutes.
  2. Add the cumin, coriander, oregano, and cayenne pepper to the pot. Stir well to coat the vegetables in the spices.
  3. Add the shredded chicken, chicken broth, cannellini beans, and corn to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 1 hour.
  4. After simmering, stir in the heavy cream and chopped cilantro. Season with salt and pepper to taste.
  5. Simmer for an additional 15 minutes to allow the flavors to meld together.
  6. Serve the white chicken chili hot, garnished with additional cilantro if desired.
