Ingredients:

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 cup sliced mushrooms
  • 2 green onions, sliced
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame seeds

Instructions:

  1. In a small bowl, whisk together soy sauce and cornstarch. Set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add chicken slices to the skillet and cook until browned and cooked through, about 5-6 minutes. Remove chicken from the skillet and set aside.
  4. In the same skillet, add garlic and ginger. Cook for 1 minute until fragrant.
  5. Add bell peppers, broccoli, snap peas, and mushrooms to the skillet. Cook for 3-4 minutes until vegetables are crisp-tender.
  6. Return the cooked chicken to the skillet and pour the soy sauce mixture over the chicken and vegetables.
  7. Add rice vinegar and honey to the skillet. Stir well to combine all the ingredients.
  8. Cook for an additional 2-3 minutes until the sauce thickens slightly.
