  • 1 red bell pepper, diced
  • 1 cup frozen peas and carrots
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Start by cooking the Uncle Ben's rice according to the package instructions. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent.
