Ingredients:

  • 1 pound Tyson boneless, skinless chicken breasts, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • Optional toppings: guacamole, sour cream, salsa, shredded cheese

Instructions:

  2. Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Cook until the vegetables are tender-crisp, about 4-5 minutes.
  4. Add the minced garlic, chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper to the skillet. Stir well to coat the vegetables with the spices.
  5. Return the cooked chicken to the skillet and toss with the vegetables and spices. Cook for an additional 2-3 minutes to allow the flavors to meld together.
