The combination of aromatic spices and the slow cooking process creates a tender and juicy chicken that is bursting with flavor.

Prep Time: 15 minutes Cook Time: 1 hour

Ingredients:

  • 4 pounds of chicken pieces (legs, thighs, or breasts)
  • 1/2 cup of Walkerswood jerk seasoning
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of soy sauce
  • 2 tablespoons of brown sugar
  • 2 tablespoons of lime juice
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground allspice
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper (adjust according to your spice preference)
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of salt

Instructions:

  1. In a large bowl, combine the Walkerswood jerk seasoning, vegetable oil, soy sauce, brown sugar, lime juice, minced garlic, ground allspice, dried thyme, paprika, cayenne pepper, black pepper, and salt. Mix well to form a marinade.
  2. Add the chicken pieces to the marinade and coat them thoroughly. Make sure each piece is well covered with the marinade. You can use your hands or tongs to do this.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight. This will allow the flavors to penetrate the chicken and make it more flavorful.
  4. Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are evenly distributed and glowing red.
  5. Remove the chicken from the marinade and shake off any excess. Discard the remaining marinade.
