Thai Crispy Garlic Chicken Recipe

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 cloves of garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cold water
  • Vegetable oil, for frying
  • Fresh cilantro, for garnish


  1. In a bowl, combine minced garlic, soy sauce, oyster sauce, fish sauce, sugar, cornstarch, black pepper, and red pepper flakes (if using). Mix well to make the marinade.
  2. Add the chicken pieces to the marinade and toss to coat. Let it marinate for at least 10 minutes, or refrigerate for up to 1 hour for more flavor.
  3. In a separate bowl, whisk together all-purpose flour, cornstarch, baking powder, and salt. Gradually add cold water while whisking until a smooth batter forms.
  4. In a deep pan or wok, heat vegetable oil over medium-high heat. The oil should be about 1 inch deep.
