Taiwanese popcorn chicken is a popular street food in Taiwan that is loved for its crispy exterior and juicy, flavorful interior. This recipe takes a healthier twist by using an air fryer instead of deep frying. The result is still deliciously crispy and addictive, but with less oil and guilt!

Ingredients:

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon five-spice powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1/4 cup potato starch (or cornstarch)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup cold water
  • 1 tablespoon vegetable oil

Instructions:

  1. In a bowl, combine soy sauce, Shaoxing wine, sesame oil, sugar, five-spice powder, garlic powder, ginger powder, salt, and black pepper. Mix well.
  2. Add the chicken pieces to the marinade and toss until well coated. Let it marinate for at least 10 minutes.
  3. In a separate bowl, whisk together all-purpose flour, potato starch, baking powder, and baking soda.
  4. Add cold water to the flour mixture and stir until it forms a thick batter.
  5. Preheat the air fryer to 400°F (200°C) for 5 minutes.
