Ingredients:
- 1 whole chicken, cut into pieces
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion, sliced carrots, sliced celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the chicken pieces to the pot and pour in the chicken broth. Add the bay leaf, dried thyme, and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 hour, or until the chicken is cooked through and tender.
- While the chicken is simmering, prepare the dumplings. In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined. Do not overmix. The dough should be sticky.
- Once the chicken is cooked
