Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion, sliced carrots, sliced celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  2. Add the chicken pieces to the pot and pour in the chicken broth. Add the bay leaf, dried thyme, and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 hour, or until the chicken is cooked through and tender.
  3. While the chicken is simmering, prepare the dumplings. In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir until just combined. Do not overmix. The dough should be sticky.
  5. Once the chicken is cooked
