Chicken pot pie is a classic comfort food that is perfect for a cozy dinner. This recipe combines tender chicken, flavorful vegetables, and a creamy sauce, all encased in a flaky pastry crust. It's a delicious and satisfying dish that the whole family will love.

Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1/2 cup diced potatoes
  • 1/2 cup diced carrots
  • 1/4 cup diced onion
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package refrigerated pie crusts

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, melt the butter over medium heat. Add the diced onion and cook until softened.
  3. Add the diced potatoes and carrots to the skillet and cook for 5 minutes, or until slightly tender.
  4. Sprinkle the flour over the vegetables and stir well to coat.
  5. Gradually pour in the chicken broth and milk, stirring constantly. Cook until the mixture thickens and comes to a boil.
  6. Add the shredded chicken, frozen mixed vegetables, salt, and black pepper to the skillet. Stir well to combine.
  7. Remove the skillet from heat.
  8. Unroll one of the pie crusts and press it into the bottom of a 9-inch pie dish.
  9. Pour the chicken and vegetable mixture into the pie dish.
  10. Unroll the second pie crust and place it on top of the filling. Press the edges of the crusts together to seal.
