- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables
- 1/2 cup diced potatoes
- 1/2 cup diced carrots
- 1/4 cup diced onion
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package refrigerated pie crusts
Instructions:
- Preheat the oven to 425°F (220°C).
- In a large skillet, melt the butter over medium heat. Add the diced onion and cook until softened.
- Add the diced potatoes and carrots to the skillet and cook for 5 minutes, or until slightly tender.
- Sprinkle the flour over the vegetables and stir well to coat.
- Gradually pour in the chicken broth and milk, stirring constantly. Cook until the mixture thickens and comes to a boil.
- Add the shredded chicken, frozen mixed vegetables, salt, and black pepper to the skillet. Stir well to combine.
- Remove the skillet from heat.
- Unroll one of the pie crusts and press it into the bottom of a 9-inch pie dish.
- Pour the chicken and vegetable mixture into the pie dish.
- Unroll the second pie crust and place it on top of the filling. Press the edges of the crusts together to seal. <
