The Costa Vida Chicken is a delicious and flavorful dish inspired by the vibrant flavors of Mexican cuisine. This recipe combines tender chicken with a tangy and slightly spicy marinade, resulting in a mouthwatering dish that is perfect for any occasion.

Prep Time: 15 minutes Cook Time: 25 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a small bowl, whisk together the lime juice, orange juice, olive oil, honey, minced garlic, cumin, chili powder, salt, and black pepper.
  2. Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, making sure it is evenly coated. Marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing any excess marinade to drip off.
  4. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Cooking time may vary depending on the thickness of the chicken breasts.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. Serve the Costa Vida Chicken with your favorite sides, such as rice, beans, tortillas, or a fresh salad. Enjoy!
