  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin seeds
  • 4-5 green chilies, slit
  • A handful of fresh cilantro leaves, chopped
  • A handful of fresh mint leaves, chopped
  • Salt to taste
  • 3 tablespoons ghee (clarified butter)
  • 2 tablespoons vegetable oil
  • 2 cups water

Instructions: How to Cook South Indian Chicken Biryani

  1. Wash the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  2. In a large bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 30 minutes.
  3. Heat ghee and oil in a large pot over medium heat. Add cumin seeds and sauté until fragrant.
  4. Add the sliced onions and green chilies. Cook until the onions turn golden brown.
  5. Add the marinated chicken pieces and cook until the chicken is browned on all sides.
  6. Stir in the chopped tomatoes, garam masala, cilantro, and mint leaves. Cook for a few minutes until the tomatoes are soft.
  7. Add the soaked basmati rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and the chicken is tender.
  8. Fluff the biryani gently with a fork. Serve hot with raita or your favorite side dish.
