South Indian Chicken Biryani Recipe

  • 2 cups basmati rice
  • 500 grams chicken, cut into pieces
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 4 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup plain yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 4 cloves
  • 4 green cardamom pods
  • 2-inch cinnamon stick
  • 1 bay leaf
  • A handful of fresh mint leaves, chopped
  • A handful of fresh coriander leaves, chopped
  • Salt to taste
  • 3 tablespoons ghee (clarified butter)
  • 3 cups water


  1. Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  2. In a large pan, heat the ghee over medium heat. Add the cumin seeds, fennel seeds, cloves, cardamom pods, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.
  3. Add the sliced onions and cook until they turn golden brown.
  4. Add the ginger-garlic paste and green chilies.
