  • 4 chicken leg quarters
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons jerk seasoning

  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)


  1. In a bowl, combine soy sauce, olive oil, brown sugar, jerk seasoning, lime juice, minced garlic, dried thyme, ground allspice, ground cinnamon, ground nutmeg, and cayenne pepper (if desired). Mix well to create the marinade.
  2. Place the chicken leg quarters in a large ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken, ensuring it is evenly coated. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
