Ingredients:

  • 1 whole smoked chicken, shredded
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves of garlic, minced
  • 6 cups of chicken broth
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, sliced carrots, sliced celery, and minced garlic to the pot. Cook until the vegetables are tender, about 5 minutes.
  3. Add the shredded smoked chicken to the pot and stir well.
  4. Pour in the chicken broth and add the dried thyme and dried rosemary. Season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for 45 minutes to allow the flavors to meld together.
