Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup low-sodium beef broth
  • 4 slices reduced-fat Swiss cheese
  • 2 tablespoons grated Parmesan cheese

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the onions and cook until caramelized, stirring occasionally, for about 15-20 minutes.
  3. Add the minced garlic, dried thyme, salt, and black pepper to the skillet. Cook for an additional 2 minutes.
  4. Push the onions to one side of the skillet and add the chicken breasts. Cook for 4-5 minutes on each side, or until browned.
  5. Pour the beef broth into the skillet and bring to a simmer. Cover the skillet and transfer it to the preheated oven.
  6. Bake for 20 minutes, or until the chicken is cooked through and the broth has reduced slightly.
  7. Remove the skillet from the oven and place a slice of Swiss cheese on top of each chicken breast. Sprinkle with grated Parmesan cheese.
  8. Return the skillet to the oven and broil for 2-3 minutes, or until the cheese is melted and bubbly.
  9. Serve the French onion chicken hot, spooning some of the caramelized onions
