Sinigang Recipe Chicken

- 1 whole chicken, cut into serving pieces
- 1 onion, sliced
- 2 tomatoes, quartered
- 2 cloves of garlic, minced
- 2 tablespoons cooking oil
- 8 cups water
- 2 tablespoons tamarind soup base
- 1 cup string beans, cut into 2-inch pieces
- 1 cup radish, sliced
- 1 cup kangkong (water spinach) leaves
- Salt and pepper to taste
Instructions:
- In a large pot, heat the cooking oil over medium heat. Sauté the onions, tomatoes, and garlic until fragrant.
- Add the chicken pieces to the pot and cook until lightly browned on all sides.
- Pour in the water and bring it to a boil. Reduce the heat to low and let it simmer for about 30 minutes or until the chicken is tender.
- Remove any scum that rises to the surface of the broth.
- Add the tamarind soup base and stir well to dissolve.
- Add the string beans and radish to the pot and cook for another 5 minutes.
- Finally, add the kangkong leaves and season with salt and pepper to taste. Cook for an additional 2 minutes.
