Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro leaves, chopped (for garnish)

Instructions:

  1. Boil the chicken breasts in a pot of water until fully cooked. This should take about 15-20 minutes. Once cooked, remove the chicken from the pot and let it cool.
  2. Using two forks, shred the cooled chicken into thin strips. Set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  4. Add the minced garlic and grated ginger to the skillet and cook for another minute, stirring continuously.
  5. Reduce the heat to low and add the ground cumin, ground coriander, turmeric powder, red chili powder, garam masala, and salt. Mix well to combine the spices with the onion mixture.
  6. Add the shredded chicken to the skillet and stir until it is evenly coated with the spice mixture. Cook for an additional 5-7 minutes, allowing the flavors to meld together.
  7. Remove the skillet from heat and garnish the shredded chicken with freshly chopped cilantro leaves
