- 2 lbs shank steak
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine
- 2 sprigs fresh rosemary
- Salt and pepper to taste
Instructions: How to Cook Shank Steak
- Preheat the oven to 325°F (165°C).
- Season the shank steak with salt and pepper on both sides.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Sear the shank steak on all sides until browned, about 3-4 minutes per side.
- Remove the steak from the pot and set aside.
- Add the onion, carrots, celery, and garlic to the pot. Cook until vegetables are softened, about 5 minutes.
- Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
- Return the shank steak to the pot and add the rosemary sprigs.
- Cover the pot and transfer to the preheated oven.
- Cook for 1.5 to 2 hours, or until the shank steak is tender and easily pulls apart with a fork.
- Remove the pot from the oven and let the shank steak rest for 10 minutes before serving.
- Serve the shank steak with the vegetables and pan juices spooned over the top.
