Rotel Chicken Quesadilla Recipe

  • 2 cups cooked chicken, shredded
  • 1 can Rotel tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/4 cup chopped fresh cilantro
  • 4 large flour tortillas
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


  1. In a large bowl, combine the shredded chicken, drained Rotel tomatoes, shredded cheddar cheese, diced onion, and chopped cilantro. Mix well.
  2. Heat a large skillet over medium heat and add the vegetable oil.
  3. Place one flour tortilla in the skillet and spread a quarter of the chicken mixture evenly over half of the tortilla.
  4. Fold the tortilla in half to cover the filling and press down gently with a spatula.
  5. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  6. Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and chicken mixture.
  7. Once all the quesadillas are cooked, cut them into wedges and serve hot.
