Roasted Chicken Rice Singapore Recipe

  • 1 whole chicken
  • 2 cups jasmine rice
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sugar
  • 1 cucumber, sliced
  • Spring onions, chopped (for garnish)


  1. Preheat the oven to 200°C (400°F).
  2. Clean the chicken thoroughly and pat it dry with paper towels.
  3. In a small bowl, mix together minced garlic, sliced ginger, vegetable oil, sesame oil, soy sauce, oyster sauce, hoisin sauce, and sugar to make the marinade.
  4. Rub the marinade all over the chicken, making sure to get it under the skin as well. Let it marinate for at least 30 minutes.
  5. Place the marinated chicken on a baking tray and roast it in the preheated oven for about 1 hour or until the chicken is cooked through and the skin is golden brown and crispy.
  6. While the chicken is roasting, rinse the jasmine rice under cold water until the water runs clear. Drain the rice.
  7. In a pot, heat some vegetable oil and sauté the drained rice with minced garlic for a few minutes until fragrant.
