- 2 tomatoes, pureed
- 1/2 cup plain yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/4 cup cream
- 2 tbsp oil
- Fresh cilantro leaves for garnish
- Salt to taste
Instructions: How to Cook Chicken Handi
- Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in ginger-garlic paste and cook for another minute.
- Add turmeric, red chili powder, and coriander powder. Cook the spices for a minute to release their flavors.
- Now, add the pureed tomatoes and cook until the oil starts to separate from the masala.
- Whisk the yogurt and add it to the pan. Cook for a few minutes until the mixture thickens.
- Add the chicken pieces and season with salt. Cover and cook until the chicken is tender, stirring occasionally.
- Sprinkle garam masala and pour in the cream. Mix well and simmer for a couple of minutes.
- Garnish with fresh cilantro leaves and serve hot with naan or rice.
