Prep Time: 15 minutes Cook Time: 25 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup sliced mushrooms
  • 1/2 cup dry white wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions: How to Cook Chicken Alexander

  1. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness.
  2. In a shallow dish, combine the flour, salt, and pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  3. In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  4. Add the mushrooms to the skillet and cook until they are golden brown and tender, about 5 minutes.
  5. Deglaze the skillet with the white wine, scraping up any browned bits from the bottom of the pan.
  6. Add the chicken broth and bring to a simmer. Return the chicken breasts to the skillet and simmer for 10-15 minutes, or until the chicken is cooked through.
  7. Stir in the heavy cream and simmer for an additional 5 minutes, until the sauce has thickened slightly.
  8. Season the sauce with salt and pepper to taste. Sprinkle with chopped parsley before serving.
  9. Serve the Chicken Alexander hot with your choice of side dishes. Enjoy!
