The Caribbean chicken soup is a flavorful and comforting dish that combines the vibrant flavors of the Caribbean with tender chicken and hearty vegetables. Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 carrot, diced
  • 1 cup diced tomatoes
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:
