- Place each chicken breast between two sheets of parchment paper and pound them to 1/4-inch thick with a meat mallet.
- Season the chicken breasts with salt and pepper, then dredge them in the flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 3 minutes on each side, until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining butter and olive oil. Add the mushrooms and sauté until they are browned and tender.
