Chicken Handi is a popular North Indian dish that is rich, creamy, and full of flavor. It is typically made with tender pieces of chicken cooked in a spiced tomato-based gravy, finished off with a touch of cream. This dish is best enjoyed with some naan or steamed rice.

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 cup heavy cream
  • 2 tablespoons ghee or oil
  • Fresh cilantro leaves for garnish
  • Salt to taste

Instructions: How to Cook Chicken Handi

  1. In a large skillet or handi (clay pot), heat ghee or oil over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add ginger-garlic paste and sauté for another minute.
  5. Stir in the tomato puree and cook until the oil starts to separate from the mixture.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. Add the chicken pieces and coat them well with the spice mixture.
  8. Cover and cook the chicken on low heat until it is tender, stirring occasionally.
  9. Once the chicken is cooked, add the yogurt and garam masala. Mix well and cook for another 5 minutes.
  10. Finally, stir in the heavy cream and simmer for a few more minutes until the gravy thickens.
  11. Garnish with fresh cilantro leaves and serve hot with naan or rice.
