Recipe Chicken Handi
Chicken Handi is a popular North Indian dish that is rich, creamy, and full of flavor. It is typically made with tender pieces of chicken cooked in a spiced tomato-based gravy, finished off with a touch of cream. This dish is best enjoyed with some naan or steamed rice.

- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1/2 cup plain yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/4 cup heavy cream
- 2 tablespoons ghee or oil
- Fresh cilantro leaves for garnish
- Salt to taste
Instructions: How to Cook Chicken Handi
- In a large skillet or handi (clay pot), heat ghee or oil over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and sauté for another minute.
- Stir in the tomato puree and cook until the oil starts to separate from the mixture.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add the chicken pieces and coat them well with the spice mixture.
- Cover and cook the chicken on low heat until it is tender, stirring occasionally.
- Once the chicken is cooked, add the yogurt and garam masala. Mix well and cook for another 5 minutes.
- Finally, stir in the heavy cream and simmer for a few more minutes until the gravy thickens.
- Garnish with fresh cilantro leaves and serve hot with naan or rice.
