Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 1 cup long-grain white rice
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions:

  1. Season the chicken breasts with salt, pepper, paprika, thyme, and oregano.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the seasoned chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
