Primavera Stuffed Chicken Recipe

  • 4 boneless, skinless chicken breasts
  • 1 cup diced bell peppers (assorted colors)
  • 1 cup diced zucchini
  • 1 cup diced cherry tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, carefully butterfly each chicken breast by cutting horizontally through the center, but not all the way through, creating a pocket for the stuffing.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers, zucchini, and minced garlic. Sauté for about 5 minutes until the vegetables are slightly softened.
  4. Remove the skillet from heat and stir in the diced cherry tomatoes, mozzarella cheese, Parmesan cheese, dried basil, dried oregano, salt, and pepper. Mix well until the cheese is melted and the filling is evenly combined.
