- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika

- 1 cup chicken broth
- 1/2 cup heavy cream
- Fresh parsley for garnish
Instructions: How to Cook Prairie Chicken
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with salt, pepper, thyme, rosemary, and paprika.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken thighs skin side down and cook until golden brown, about 5 minutes per side. Remove from the skillet and set aside.
- Add diced onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Return the chicken thighs to the skillet, skin side up.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
- Remove the skillet from the oven and stir in heavy cream.
- Return the skillet to the stovetop and simmer for a few minutes until the sauce has thickened.
