Ingredients:

  • 8 ounces lo mein noodles
  • 2 tablespoons vegetable oil
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup sliced bell peppers
  • 1 cup shredded carrots
  • 1 cup snow peas
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced

Instructions:

  1. Bring a large pot of water to a boil. Cook the lo mein noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Add the mushrooms, bell peppers, carrots, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, and red pepper flakes (if using). Pour the sauce over the vegetables in the skillet and stir to coat.
  5. Add the cooked lo mein noodles and cooked chicken back to the skillet. Toss everything together
