Peri Peri Chicken and Rice is a flavorful and spicy dish inspired by Portuguese and African cuisine. The combination of tender chicken marinated in a spicy peri peri sauce served with fragrant rice makes for a delicious and satisfying meal.

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup peri peri sauce
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: How to Cook Peri Peri Chicken And Rice

  1. Marinate the chicken thighs in peri peri sauce for at least 30 minutes, or overnight for best flavor.
  2. Preheat the oven to 375°F (190°C).
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken thighs skin side down and sear for 3-4 minutes until golden brown. Flip and sear the other side for another 3-4 minutes.
  4. Remove the chicken from the skillet and set aside. In the same skillet, sauté the onion, garlic, and red bell pepper until softened.
  5. Add the rice to the skillet and stir to coat in the vegetable mixture. Pour in the chicken broth and season with salt and pepper.
  6. Place the chicken thighs back into the skillet on top of the rice mixture. Cover the skillet with a lid or foil and transfer to the preheated oven.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  8. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley and enjoy your delicious peri peri chicken and rice!
