- 4 chicken thighs, bone-in and skin-on
- 1/4 cup peri peri sauce
- 1 cup basmati rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions: How to Cook Peri Peri Chicken And Rice
- Marinate the chicken thighs in peri peri sauce for at least 30 minutes, or overnight for best flavor.
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken thighs skin side down and sear for 3-4 minutes until golden brown. Flip and sear the other side for another 3-4 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, sauté the onion, garlic, and red bell pepper until softened.
- Add the rice to the skillet and stir to coat in the vegetable mixture. Pour in the chicken broth and season with salt and pepper.
- Place the chicken thighs back into the skillet on top of the rice mixture. Cover the skillet with a lid or foil and transfer to the preheated oven.
