Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced pineapple
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. In a small bowl, whisk together the olive oil, lime juice, honey, minced garlic, cumin, paprika, salt, and black pepper to make the marinade.
  2. Place the chicken breasts and shrimp in separate resealable plastic bags. Pour half of the marinade over the chicken and the other half over the shrimp. Seal the bags and refrigerate for at least 1 hour to marinate.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken and shrimp from the marinade, discarding the excess marinade.
  5. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Grill the shrimp for about 2-3 minutes per side, or until pink and opaque.
  6. While the chicken and shrimp are grilling, brush the diced pineapple with a little olive oil and grill for about 2-3 minutes per side, until
