- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until they become fragrant and translucent.
- Add the chicken breasts to the skillet and cook until they are browned on both sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the rice, cream of chicken soup, chicken broth, sour cream, dried thyme, dried parsley, salt, and black pepper. Stir well to combine.
- Transfer the rice mixture to a greased 9x13-inch baking dish. Place the browned chicken breasts on top of the rice.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and sprinkle the shredded cheddar cheese over the chicken and rice. Return the dish to the oven and bake for an additional 10-15 minutes, or
