Ortega Chicken Enchilada Recipe

- 2 cups cooked chicken, shredded
- 1 cup enchilada sauce
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/4 cup sliced black olives
- 1/4 cup chopped fresh cilantro
- 8 flour tortillas
- 1 tablespoon vegetable oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the vegetable oil over medium heat.
- Add the diced onion and bell pepper to the skillet and sauté until they become tender.
- Add the shredded chicken, chili powder, cumin, garlic powder, salt, and pepper to the skillet. Stir well to combine all the ingredients.
- Pour half of the enchilada sauce into the bottom of a baking dish.
- Take a flour tortilla and spoon a generous amount of the chicken mixture onto the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat this step with the remaining tortillas and chicken mixture.
- Pour the remaining enchilada sauce over the rolled tortillas, making sure to cover them completely.
- Sprinkle the shredded cheddar cheese evenly over the enchiladas.
