Ortega Chicken Enchilada Recipe

  • 2 cups cooked chicken, shredded
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the diced onion and bell pepper to the skillet and sauté until they become tender.
  4. Add the shredded chicken, chili powder, cumin, garlic powder, salt, and pepper to the skillet. Stir well to combine all the ingredients.
  5. Pour half of the enchilada sauce into the bottom of a baking dish.
  6. Take a flour tortilla and spoon a generous amount of the chicken mixture onto the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat this step with the remaining tortillas and chicken mixture.
  7. Pour the remaining enchilada sauce over the rolled tortillas, making sure to cover them completely.
  8. Sprinkle the shredded cheddar cheese evenly over the enchiladas.
