Olgas Chicken Chili Recipe

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper to taste


  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the diced chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the diced onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened.
  4. Add the cooked chicken back to the pot, along with the black beans, kidney beans, diced tomatoes, tomato paste, chicken broth, chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper.
