Nicaraguan Chicken Recipe

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced


  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  3. Add the sliced red and green bell peppers to the skillet and cook for another 2 minutes.
  4. In a small bowl, mix together the cumin, paprika, dried oregano, salt, and black pepper.
  5. Rub the spice mixture onto both sides of the chicken breasts.
  6. Push the vegetables to one side of the skillet and add the chicken breasts to the other side.
  7. Cook the chicken breasts for about 5 minutes on each side, or until they are cooked through.
  8. Pour the chicken broth into the skillet and bring it to a simmer.
  9. Cover the skillet and let the chicken simmer in the broth for about 10 minutes.
  10. Remove the chicken from the skillet and set it aside.
