- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 tomato, chopped

- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 cup chicken broth
- 1/4 cup fresh cilantro, chopped
Instructions: How to Cook Nicaraguan Chicken
- Season the chicken thighs with salt, pepper, cumin, paprika, and oregano.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the chicken thighs to the skillet and cook until browned on both sides, about 5 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion and garlic. Cook until softened, about 3 minutes.
