Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cornstarch
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1/2 cup orange juice
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons orange zest
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
Instructions:
- In a shallow bowl, place the cornstarch. Dip each chicken piece into the beaten eggs, then coat it with cornstarch, shaking off any excess.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the coated chicken pieces in batches and cook until golden brown and crispy, about 3-4 minutes per side. Remove the cooked chicken from the skillet and set aside.
- In a separate bowl, whisk together the orange juice, soy sauce, rice vinegar, brown sugar, orange zest, minced garlic, grated ginger, and red pepper flakes (if using).
- Reduce the heat to medium and add the sauce mixture to the skillet. Cook for 2-3 minutes, stirring constantly, until the sauce thickens.
- Return the cooked chicken to the skillet and toss it in the sauce until well coated. Cook for an additional 2-3 minutes to allow the flavors to meld together.
