Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cornstarch
  • 2 eggs, beaten
  • 1/4 cup vegetable oil
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons orange zest
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)

Instructions:

  1. In a shallow bowl, place the cornstarch. Dip each chicken piece into the beaten eggs, then coat it with cornstarch, shaking off any excess.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the coated chicken pieces in batches and cook until golden brown and crispy, about 3-4 minutes per side. Remove the cooked chicken from the skillet and set aside.
  3. In a separate bowl, whisk together the orange juice, soy sauce, rice vinegar, brown sugar, orange zest, minced garlic, grated ginger, and red pepper flakes (if using).
  4. Reduce the heat to medium and add the sauce mixture to the skillet. Cook for 2-3 minutes, stirring constantly, until the sauce thickens.
  5. Return the cooked chicken to the skillet and toss it in the sauce until well coated. Cook for an additional 2-3 minutes to allow the flavors to meld together.
