Mrs Wilkes Fried Chicken Recipe

  • 4 pounds of chicken pieces (legs, thighs, wings, or breasts)
  • 2 cups of buttermilk
  • 2 cups of all-purpose flour
  • 1 tablespoon of paprika
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • Vegetable oil for frying


  1. In a large bowl, pour the buttermilk over the chicken pieces and let them marinate for at least 1 hour or overnight in the refrigerator.

  3. Heat vegetable oil in a deep skillet or Dutch oven over medium-high heat until it reaches 350°F (175°C).
  4. Remove the chicken pieces from the buttermilk, allowing any excess to drip off.
  5. Dredge each chicken piece in the flour mixture, making sure to coat it thoroughly.
  6. Carefully place the coated chicken pieces into the hot oil, being cautious not to overcrowd the pan.
  7. Fry the chicken for about 6-8 minutes per side, or until golden brown and cooked through.
  8. Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain any excess oil.
  9. Repeat the frying process with the remaining chicken pieces.
