Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 2 tablespoons peanut butter
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup coconut milk
  • Wooden skewers, soaked in water

Instructions:

  1. In a bowl, combine soy sauce, honey, lime juice, peanut butter, minced garlic, cumin, coriander, cayenne pepper, and coconut milk. Mix well to create the marinade.
  2. Cut the chicken breasts into thin strips and place them in a shallow dish. Pour the marinade over the chicken, making sure each piece is coated. Cover the dish and refrigerate for at least 1 hour, allowing the flavors to meld together.

  4. Thread the marinated chicken strips onto the soaked wooden skewers.
