Mitsuken Garlic Chicken Recipe

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup buttermilk
  • 4 cloves garlic, minced
  • Vegetable oil, for frying


  1. In a large bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.
  2. In a separate bowl, whisk together the buttermilk and minced garlic.
  3. Place the chicken thighs in the buttermilk mixture and let them marinate for at least 1 hour in the refrigerator.
  4. In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
  5. Remove the chicken thighs from the buttermilk mixture, allowing any excess liquid to drip off.
