- 1 red bell pepper, diced

- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion, minced garlic, and diced bell peppers to the skillet. Cook until the vegetables are softened, about 5 minutes.
- Push the vegetables to one side of the skillet and add the chicken breasts to the other side. Cook the chicken until it is browned on both sides, about 4-5 minutes per side.
