Mexican Chicken Delight Recipe

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced


  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion, minced garlic, and diced bell peppers to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Push the vegetables to one side of the skillet and add the chicken breasts to the other side. Cook the chicken until it is browned on both sides, about 4-5 minutes per side.
  4. Add the minced jalapeno pepper, diced tomatoes, black beans, frozen corn kernels, chili powder, cumin, paprika, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
