Max’S Chicken Recipe

  • 1 whole chicken, cut into serving pieces
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon ground black pepper
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1 teaspoon salt
  • Oil for frying


  1. In a bowl, combine minced garlic, soy sauce, oyster sauce, fish sauce, and ground black pepper. Mix well.
  2. Add the chicken pieces to the marinade and coat them evenly. Let it marinate for at least 30 minutes.
  3. In a separate bowl, combine all-purpose flour, cornstarch, and salt. Mix well.
  4. Heat oil in a deep pan or fryer over medium heat.
  5. Dredge each marinated chicken piece in the flour mixture, making sure to coat it thoroughly.
  6. Carefully place the coated chicken pieces in the hot oil and fry until golden brown and crispy. This may take around 10-15 minutes per batch.
  7. Once cooked, remove the chicken from the oil and place them on a paper towel-lined plate to drain excess oil.
