  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 can (14 ounces) diced tomatoes
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces penne pasta
  • Fresh basil leaves, for garnish


  1. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  2. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant.
  3. Add the chicken broth, heavy cream, diced tomatoes, dried basil, dried oregano, salt, and black pepper to the skillet. Stir well to combine.
  4. Bring the sauce to a simmer and return the chicken breasts to the skillet. Cover and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
  5. While the chicken is cooking, cook the penne pasta according to the package instructions. Drain and set aside.
