Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 cups chicken broth
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat some olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the carrots, celery, onion, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the bay leaf, dried thyme, dried rosemary, salt, and black pepper to the pot. Stir well to combine.
  4. Return the chicken to the pot and pour in the chicken broth. Bring the soup to a boil, then reduce the heat to low and let it simmer for 30 minutes.
  5. Remove the chicken from the pot and shred the meat using two forks. Discard the bones and return the shredded chicken to the pot.
  6. Add the pasta to the pot and cook until al dente, according to the package instructions.
