- 1 whole chicken, cut into pieces
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 cups chicken broth
- 1 cup small pasta (such as ditalini or elbow macaroni)
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, heat some olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the carrots, celery, onion, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the bay leaf, dried thyme, dried rosemary, salt, and black pepper to the pot. Stir well to combine.
