- 1 onion, diced

- 1 red bell pepper, diced
- 1 green bell pepper, diced

- 1 cup chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions: How to Cook Lupe Tortilla Chicken
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion and garlic. Cook until softened, about 3 minutes.
- Add the bell peppers and cook for another 2-3 minutes.
- Stir in the diced tomatoes, chicken broth, chili powder, and cumin. Bring to a simmer.
