Lourdes Chicken Soup Recipe


Lourdes Chicken Soup is a comforting and delicious dish that is perfect for any time of the year. This hearty soup is packed with tender chicken, vegetables, and flavorful broth.   • 1 whole chicken, cut into pieces
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 8 cups chicken broth
  • Salt and pepper to taste


  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion, minced garlic, sliced carrots, and celery. Cook until the vegetables are slightly softened.
  3. Add the chicken back to the pot and pour in the chicken broth. Add the bay leaf, dried thyme, and dried rosemary. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 hour, or until the chicken is cooked through and tender.
  5. Once the chicken is cooked, remove it from the pot and shred it into bite-sized pieces using two forks. Return the shredded chicken to the pot.
