Lourdes Chicken Soup is a comforting and delicious dish that is perfect for any time of the year. This hearty soup is packed with tender chicken, vegetables, and flavorful broth. Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 8 cups chicken broth
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion, minced garlic, sliced carrots, and celery. Cook until the vegetables are slightly softened.
