Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chicken broth
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, thinly sliced (for garnish)

Instructions:

  1. In a small bowl, combine the soy sauce and cornstarch. Add the sliced chicken and toss to coat. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the bell peppers and onion. Cook until the vegetables are crisp-tender, about 3-4 minutes.
  4. Add the minced garlic and grated ginger to the skillet. Cook for an additional 1 minute.
  5. In a small bowl, whisk together the chicken broth, oyster sauce, hoisin sauce, and sesame oil. Pour the sauce mixture into the skillet with the vegetables.
