Lebanese Chicken Liver Recipe

  • 500g chicken livers
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Pita bread, for serving


  1. Start by cleaning the chicken livers. Remove any connective tissues or membranes and cut them into bite-sized pieces.
  2. In a bowl, combine the ground cumin, coriander, cinnamon, paprika, cayenne pepper (if using), salt, and pepper. Mix well.
  3. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
  4. Add the chicken livers to the skillet and cook for about 5 minutes, stirring occasionally, until they are browned on the outside but still slightly pink on the inside.
  5. Sprinkle the spice mixture over the chicken livers and stir well to coat them evenly. Cook for an additional 2-3 minutes to allow the flavors to meld together.
